Cappelletto Festival

Typical dishes of the Ferrarese tradition. Symbol of the event will be the delicious “cappelletto”: egg pasta so called because of its characteristic shape reminiscent of a hat. They are made by cutting the pasta sheet into squares, in the centre of which the filling is placed. The pastry is then folded in two, in the shape of a triangle, and the two ends are joined by overlapping. An early reference to this culinary preparation can be found in a text dating back to 1556 by Messisbugo, a former Este court cook with Alfonso I d'Este at the beginning of the 16th century.
