This festival takes place at Guarda Ferrarese between May and June, and it celebrates the “salama da tai”, a typical pork meat dish with a rich taste and an unforgettable aroma, produced with an ancient recipe: only meat, salt, pepper, wine… and time….
“Salama da tai” looks like “salama da sugo"'s sister, for its round shape, but it is served without any cooking. This pork meat salami, with a rich taste and an unforgettable aroma, is produced following an ancient recipe which combines meat, salt, pepper, wine, and a long time for seasoning. This delicious food is served in slices, with a typical fruit of the Ferrarese country: melon
